* LG – Mom’s Strawberry Shake

Makes 2 12 oz. servings.

Per 12 oz. serving:
Cal:170, Fat 5.5, carbs 15, fiber 3.5, protein 15
6 Large Frozen Strawberries (about 1 cup) **

6 Ice Cubes

1 cup milk of your choice, almond milk or soymilk

1 scoop of protein powder of your choice

2 Tablespoons Flax seed meal

Put all ingredients into blender and blend until smooth.

Serve with straw.  YUM.  (Mom loved it)

* LG = Low Glycemic

** Substitute: Peaches, Pears, Raspberries, Blackberries, Blueberries, Raspberries or Mangos, use bananas sparingly as they are high in carbs.

The Book of Eli

My husband I don’t normally attend an R-rated movie.  This was an exception.  And here’s why.  This move is a post-apocalyptic tale, in which a lone man fights his way across America in order to protect a sacred book that holds the secrets to saving humankind.  What book?  The Holy Bible.

This movie is rated R for violence (some hard to watch scenes, but none worse than The Passion of The Christ).  For me the R rating was for hearing the F word a few times.   There is no nudity thank goodness and no graphic sex.  There are a couple of scenes of attempted rape, but no skin … one scene is shot from quite a distance away and the director wants you to know an assault is taking place but is merciful enough not to show it to us.

This movie was amazingly real.  As the adverts claim “it will rock your soul”.  It rocked mine.  Below is an excerpt from the trailer.

Eli (Denzel Washington) has been on a journey for 30 years, walking west across America after a cataclysmic war that turned the earth into a total wasteland. The world has become a lawless civilization where people must kill or be killed. The barren roads belong to gangs of cutthroats who rob and kill for water, a pair of shoes, a lighter, or just for fun. Eli is a peaceful man who only acts in self defense, and becomes a warrior with unbelievable killing skills when he is challenged. After the war and the “Big Flash”, Eli was guided by a higher power to a hidden book and given the task of protecting the book and taking it to its final destination. Eli guards the book with his life, because he knows that the book is the only hope that humanity has for its future.

Do you think all Christians are mamby pamby wimps, brainwashed by other impoverished, boring, misled and/or pathetic souls looking for a crutch or worse, power.  True Christians all have one thing in common, believing that the only way to Heaven is by embracing what Jesus Christ did on the cross of Calvary,namely dying in our place so that we would not have to pay for our own sin.  He was a substitute for us.  God makes Christians in all shapes/sizes and personalities.  He knows best where our gifts can be used in the world and he positions his children in those strategic places.  Denzel is riviting in this role and powerful in his Christian walk.    God is Amazing.

Patrick Hughes plays that we might hear the music of opportunity and the sound of potential!

Patrick is a remarkable young man who was born without eyes and without the ability to fully straighten his arms and legs, making him unable to walk.  Additionally, two steel rods were surgically attached to Patrick’s spine to correct scoliosis. Fettuccini Alfredo with Baby Portobello Mushrooms

Scrumptuous (Serves 4) ~ No Cream

8 oz. Baby Bella Mushrooms (quartered)

1 Cup Cashew Cream

8 oz pasta (your choice of what type of Pasta, but I use whole wheat because it is a terrific source of fiber

1/2 cup Parmesano Reggiano Cheese (grated)
1 Teaspoons of Olive Oil
1 Tablespoon of Butter
1/2 cup Sake (white wine, or vodka)
Salt/Pepper (to taste)
Parsley (Fresh or dried (for garnish)
Nutmeg (Fresh or dried (for garnish)

Cook the pasta.  It can be cooking while you are preparing the mushrooms (below).

Cashew cream takes some time to make so you should have done that already.  Click on the link above to learn how to make it.  It’s really really scrumptuous and its very difficult to tell the differnce between fettuccini  made with cashew cream as opposed to heavy cream.    Cashews are a “good fat” however, so it is my preference to use it where I can.

MUSHROOM PREPARATION:
Clean then cut mushroom in quarters.  Add the butter and oil to a saute and melt over low heat.  Put mushrooms into Saute Pan.  Turn heat up to medium high heat and cook mushrooms until you begin to see them form a brown crust.  This doesn’t take long, so watch them  When they look done, add the alcohol to the pan to deglaze.  Give it a good stir, then remove from the heat.

In a Medium saucepan, add about 1 cup of cashew cream.  Add enough water until the “cream”  reaches the consistency of heavy cream.  Add water slowly and keep stirring til you get the desired consistency.

Add the mushrooms to the sauce.

Bring the mushroom sauce, the pasta, and the cheese to the table in seperate bowls.

I don’t like to pour the sauce over the pasta, because as it sits, the pasta sucks up all the sauce and the pasta becomes too dry.

It’s better to make individual servings, then add your garnish.

Garlic (optional) add as much as you like to the mushrooms while they are cooking.

This is a scrumptuous dish for when you feel like splurging.  Beware, it is not low fat.  It only has 2 teaspoons of butter, so other than that, all the fats used are the “good for you kind”.

Healthy Fiber Filled Cereal.

1 cup Puffins (Click on puffins pic for nutritional info)

1 Cup Banana Chips (Health Food Store)

1/8  Cup Pistachio’s  (shelled)*
1/8  Cup Pumpkin Seeds

1 cup Yogurt Almonds
1 cup raw cashews
1 cup Yogurt Raisins
1 cup garlic sesame sticks (from health food store)

Mix all together in very large bowl.  Put into containers.  Keeps for weeks, but doesn’t last in my house for weeks.

I do not allow myself more than 1/2 cup of this a day (“if” I even eat it every day), because
although it is healthy, it is very calorie dense.  However, those puffins have 6 grams of fiber
for each 2/3 cup serving.

*Be sure the pistachios are not in their shells.

You can buy the Puffins at your local health food store.  They come in other flavors too.
Many people like the peanut butter flavor.

Tech Tip #4 – Netbook Texting help

I purchased a netbook (which I love) but did not realize that my provider (Verizon) would charge me 20c per text AND
that there was no text bundle I could purchase to minimize my fees.  For instance, on my cell phone I pay $5.00 and that gets me 250 texts.  $9.99 gets me  500 texts, and so on.  So .. my savvy tech-e sister told me about call wave.

It works great and now I can use my phone for my phone and I can text on my netbook which in reality acts
as a big droid.
